Chicken and Rice Casserole with Almonds
8 pieces of lightly grilled or boiled chicken fillet
2 cups boiled basmati rice
1 cup cooking cream
1 cup chicken broth
1 cup grated sweet Akkawi or Nabulsi cheese
1 cup grated mozzarella cheese
1 cup sliced fresh mushrooms or drained canned mushrooms
1 onion, chopped and sautéed
1 clove of garlic, crushed
1 cup toasted almonds, crushed or sliced
2 tablespoons vegetable oil
½ teaspoon nutmeg
½ teaspoon mixed spices
Salt and black pepper to taste
