Mutabbaq eggplant with pomegranate molasses
12-15 small eggplants
1 kilo of minced meat
1 chopped onion
1 teaspoon salt/black pepper
1/2 teaspoon black pepper
1/2 teaspoon mixed spices
4-5 tomatoes, peeled and chopped
2 crushed garlic
1 chopped hot pepper
1 cup of water
1/2 tablespoon of tomato puree
2 tablespoons of pomegranate molasses
Pine nuts or roasted almonds
frying oil
Pomegranate and parsley to decorate
1 tablespoon flour, for garnish, optional
