Pumpkin salad with quinoa and chickpeas
leafy greens
1 cup of quinoa
2 cups red capsicum, diced
Cut the pumpkin into medium sized pieces
Salt and Pepper
Smoked paprika
Turmeric teaspoon
2 finely chopped green onions
1 cup of cheese balls
2 cups of pomegranate
2 cups of chickpeas
Marinade ingredients:
1/2 cup of olive oil
2 tablespoons of Dijon mustard
2 tablespoons of balsamic vinegar
1 tablespoon of honey
1/4 cup of lemon juice
salt and pepper as needed
