Grilled Eggplant Salad
2 eggplants, cut into rounds
Salt and pepper
Olive oil
Crushed hot pepper
Sumac
Sauce:
1 cup chopped tomatoes
1 cup chopped green olives
1 cup chopped walnuts
2 cloves crushed garlic
¼ cup chopped mint
¼ cup parsley
¼ cup green onions
¼ cup olive oil
Juice of 1/2 lemon
1 tablespoon pomegranate molasses
Salt and pepper and a sprinkle of sumac
