Stuffed Casings with Cardamom and Saffron

Ingredients:- 500 g cleaned casings- 3 cups medium-grain rice- 300 g lamb, cut into small pieces- 100 g lamb fat- 1 tbsp broth powder- 1 tbsp onion powder- 1 tsp garlic powder- 3 tbsp olive oil- 1 cup chickpeas- 1 tsp ground cardamom- 1/2 tsp saffron- 1/2 tsp ground cinnamon- A pinch of nutmeg

For the cooking broth:- Cold water- Onion and garlic- Whole cardamom and cinnamon sticks- Bay leaves and allspice- Whole black pepper- Garlic powder and onion powder- Beef broth cubes- Water as needed- Oil or ghee for frying

Pepper and Garlic Sauce:- Hot pepper and vinegar- Garlic and lemon- Salt and pepper
