Asian Noodle Salad
Ingredients
600 grams noodles
2 cups thinly sliced carrots
2 cups thinly sliced red or yellow peppers
2 cups thinly sliced cucumbers
2 cups thinly sliced red cabbage
1 cup chopped green onions
4 tablespoons toasted sesame seeds
1 cup chopped cilantro or parsley (optional)
For the sauce mixture
8 tablespoons soy sauce
6 tablespoons lemon juice
4 tablespoons honey or brown sugar
4 tablespoons sesame oil
4 tablespoons vegetable oil
2 tablespoons grated ginger
4 cloves crushed garlic
2 teaspoons crushed red pepper flakes or hot sauce, to taste
