Chicken Fatteh
For the chicken:
1 diced chicken (about 1.2 kg)
1 large onion
2 bay leaves
4 cardamom pods
1 cinnamon stick
Peppercorns
Salt and black pepper
A pinch of ground cinnamon
For the rice:
2 cups long-grain rice
3 tablespoons ghee or oil
Salt
Spices to taste
For the bread:
2 loaves of shrak or taboon bread, cut into squares, fried or toasted
Garlic and lemon sauce:
2 cloves of garlic, crushed
½ cup lemon juice
1 tablespoon vinegar
1 cup chicken broth
½ teaspoon salt
