2 cans canned artichokes
1 large cucumber, diced
1 red bell pepper, diced
¼ cup green or black olives
¼ cup diced feta or mozzarella cheese
2 tablespoons toasted pine nuts
2 tablespoons lemon juice
3 tablespoons olive oil
1 teaspoon balsamic vinegar
1 teaspoon Dijon mustard
Salt and black pepper to taste
Fresh basil leaves or chopped parsley for garnish
