For the rice:
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, chopped
1 tomato, chopped
¼ cup tomato paste
1 cup red pepper
1 cup corn
1 cup black beans
1 cup chopped green onions
½ cup chopped green cilantro
¼ cup lemon juice
1 teaspoon sugar
1 tablespoon Mexican spices
1 teaspoon smoked paprika
1 teaspoon oregano
1 tablespoon instant chicken broth
Salt and pepper
Green onions and green cilantro for garnish
2 cups American rice
1 cup Egyptian rice
4 - ½ cup boiling water
Lemon slices for serving
