Dough:- 2 cups coarse semolina- 3 cups fine semolina- 2 cups clarified butter (ghee)- 1 cup all-purpose flour- ½ cup powdered sugar- ½ cup powdered milk- 1 teaspoon mahlab (spice made from cherry pits)- 1 cup liquid milk- ¼ teaspoon yeast- 1 tablespoon rose water- 3 tablespoons rose water
Filling:
For the Date Filling:- 700 grams dates- 1 tablespoon ground cinnamon- ½ teaspoon ground nutmeg- 1 tablespoon ground anise and fennel- 1 tablespoon ghee
For the Walnut Filling:- Ground walnuts- 1 teaspoon ghee- ¼ teaspoon ground nutmeg- 2 tablespoons rose water
For the Pistachio Filling:- Ground pistachios- 1 teaspoon ghee- 1 teaspoon rose water- 2 tablespoons rose water
