Recipe Ingredients:
For the Maamoul Dough:- ½ kilogram fine semolina- ½ kilogram coarse semolina- 1 teaspoon ground mastika (mastic)- 1 teaspoon mahlab- 3 tablespoons sugar- 1 large cup or melted animal ghee (clarified butter)- 1 large cup or melted animal butter- ½ cup flour- 3 tablespoons powdered milk- A pinch of yeast- A pinch of sugar for fermentation- Warm water for kneading
For the Date Filling:- 1 kilogram date paste- 1 teaspoon ground cardamom- 1 tablespoon cinnamon- A pinch of nutmeg- Ghee
For the Walnut Filling:- Coarsely chopped walnuts- 1 tablespoon ghee- ¼ teaspoon nutmeg- 1 tablespoon cinnamon- 2 tablespoons syrup
For the Pistachio Filling:- Coarsely chopped or crushed pistachios- 1 teaspoon rosewater or orange blossom water- 2 tablespoons syrup
