Damietta Eggplant Salad

Ingredients

2 large eggplants, cut into small cubes

Plenty of oil for frying

1 small onion, chopped

4 cloves of garlic, crushed

1 green hot pepper, chopped

Juice of 2 tomatoes

2 tablespoons vinegar

2 tablespoons lemon juice

1 tablespoon chopped green coriander

½ teaspoon cumin

½ teaspoon hot pepper or crushed pepper

Salt to taste

A pinch of sugar
