### Meat Enchiladas
- 2 tablespoons vegetable oil
- ½ kilogram coarsely ground beef
- 1 finely chopped onion
- 1 chopped hot pepper
- 1 cup red and green bell peppers
- 1 cup corn
- 1 cup black beans
- 2 tablespoons cream or cream cheese
- Salt and pepper
- 1 teaspoon Mexican spices
- Cumin, oregano, and crushed chili flakes
**Sauce Ingredients:**
- 1 finely chopped onion
- 4 finely chopped garlic cloves
- ½ cup crushed tomatoes
- ¼ cup tomato paste
- 1 tablespoon chicken broth substitute
- 1 cup warm water
- Salt and pepper
- 1 teaspoon Mexican spices
- 1 teaspoon (cumin and dried thyme)
- A pinch of sugar
- Crushed chili flakes
**Other Ingredients:**
- Tortillas
- Sour cream
- Chopped green onions
- 2 diced avocados
- 2 cups shredded Cheddar and Monterey Jack cheese
