Chicken Marinade:800g chicken pieces4 tablespoons yogurt1/2 tablespoon crushed garlic1 tablespoon grated fresh ginger1/2 teaspoon garam masala1/2 teaspoon Kashmiri ground hot pepperA pinch of saffronSalt and pepper to taste
Sauce:1 tablespoon vegetable oil1 tablespoon butter1 onion, finely chopped1/2 tablespoon crushed garlic1 tablespoon grated fresh ginger1/4 cup tomato paste1 kg tomatoes, chopped1.5 tablespoons white vinegar2 tablespoons white sugar1 cup cashews2 cups chicken broth
Spices:5 cardamom pods2 large cloves1 cinnamon stick5 black peppercornsDried hot red pepper (Kashmiri), to taste1 teaspoon ground fenugreek leaves (optional)3 teaspoons garam masala
3 tablespoons butter1.25 cups cooking cream
Serve with rice.
