Eggplant rolls with cheese, by Chief Dima Hajjawi,
Ingredients:
3 large chopped lengthwise
Olive oil for roasting eggplant
400 grams of cream cheese from Almarai
1 cup of grated parmesan cheese
2 tablespoons of basil + 1 tablespoon of fresh mint
1 tablespoon of dried thyme + 1 tablespoon of dried tomatoes
Leafy greens
Cherry tomato
For Dressing :
( olive oil, lemon juice, and salt )
