Lentil Soup with Potatoes and Ginger
1 cup red lentils, washed and drained
1 medium potato, cut into small cubes
1 small onion, chopped
2 garlic cloves, chopped
1 tablespoon fresh grated ginger (or ½ teaspoon ginger powder)
1 small carrot (optional), grated or finely chopped
5 cups water or vegetable broth
1 tablespoon olive oil
½ teaspoon turmeric
½ teaspoon cumin
¼ cup lemon juice
Salt and pepper to taste
