Healthy Zucchini Falafel
For the falafel:
500 grams of soaked chickpeas
3 grated and squeezed zucchini
1 teaspoon cumin
1 teaspoon dried coriander
1/2 teaspoon paprika
3 cloves of garlic
1 teaspoon salt
1/2 cup parsley
1/2 cup coriander and mint
Lemon zest
1 small onion, finely chopped
Olive oil for frying
For the dip:
1 cup yogurt
1 mint leaf, chopped
Grated and squeezed zucchini
1 clove of garlic
Juice of half a lemon
